We have reached out to incredible distilleries across the United States to source "unicorn" barrels that are remarkable but don't fit the typical taste profile of their batches.

We bring these barrels to Austin and bottle them for limited releases.

That means you get to try unique barrels from some of your favorite distilleries or be introduced to a distillery you've never tried before.

 

What is Independent Bottling?

Independent bottling is a practice that originated in Scotland. It involves companies purchasing specially selected barrels from various distilleries and releasing special edition bottlings.

Traditionally, the bottler will release a single cask or a special release of a selected blend. Often the distilleries used in the independent release are featured either directly on the bottle or in the materials that clarify the ingredients of the blend.

The result is a curated release of an expression from a distillery that consumers wouldn't normally get the chance to experience. Or, in the case of blends, a curated whisky profile that highlights the beauty of each individual whisky in a blend that creates a new and remarkable spirit.

Tasting Notes

This whiskey kicks open the door like a Texan roughneck wearing boots of black molasses and pipe tobacco. Sliding up to the bar, it perches thick and heavy. A coin spins across the wood and buys a whole bottle.

A pour, and a layer of sweet coffee and spice hang in the air.

Patiently, a sip. Barrel char bitter and a worn leather satchel tug on memories of better days. Another drink. A bit more this time. Soft caramel and vanilla peek out from behind the veil.

“She was the best of me…”

Silence falls over the room as it rises and fills a glass for everyone at the bar. Bottle empty, it glides out the door on a trail of mesquite-black and honey-gold.
